- 4 boneless, skinless chicken breasts
- 1 cup honey
- 1/2 cup Dijon mustard
- 1/4 cup olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 8 slices of bacon
- Fresh parsley for garnish (optional)
Instructions
- In a medium-sized mixing bowl, combine the honey, Dijon mustard, and olive oil. Whisk together until the mixture is smooth and well combined.
- Add the garlic powder, onion powder, smoked paprika, salt, and pepper to the bowl. Continue to whisk until all ingredients are fully incorporated.
- Taste the marinade and adjust seasoning if necessary. You can add more honey for sweetness or more mustard for tanginess, depending on your preference.
- Place the chicken breasts in a large resealable plastic bag or a shallow dish.
- Pour the honey mustard marinade over the chicken, ensuring that each piece is well coated.
- Seal the bag or cover the dish with plastic wrap. Refrigerate for at least 1 hour, but for best results, marinate for 4 hours or overnight.
- While the chicken is marinating, preheat your oven to 400°F (200°C).
- Take the bacon slices and lay them out on a baking sheet lined with parchment paper. Make sure the slices do not overlap.
- Bake the bacon in the preheated oven for about 15-20 minutes, or until crispy. Once done, remove from the oven and let it cool on a paper towel-lined plate.
- After marinating, remove the chicken from the refrigerator. Preheat a large skillet or grill pan over medium-high heat.
- Remove the chicken from the marinade, allowing any excess to drip off. Discard the remaining marinade.
- Add a tablespoon of olive oil to the skillet if needed. Place the chicken breasts in the skillet, making sure not to overcrowd the pan.
- Cook the chicken for about 6-7 minutes on one side without moving it.
- Flip the chicken breasts and reduce the heat to medium. Cook for an additional 6-7 minutes, or until the internal temperature reaches 165°F (75°C).
- Once cooked, remove the chicken from the skillet and let it rest for 5 minutes.
- While the chicken is resting, crumble the crispy bacon into bite-sized pieces.
- Slice the chicken breasts into strips or leave them whole, depending on your serving preference.
- On a serving platter, arrange the chicken slices. Sprinkle the crumbled bacon generously over the top.
- If desired, drizzle a little extra honey mustard sauce over the chicken and bacon for added flavor.
- Garnish with freshly chopped parsley for a pop of color and freshness.
