  • 1 cup honey

  • Salt and pepper to taste
  • 8 slices of bacon
  • Fresh parsley for garnish (optional)

Instructions

  1. In a medium-sized mixing bowl, combine the honey, Dijon mustard, and olive oil. Whisk together until the mixture is smooth and well combined.
  2. Add the garlic powder, onion powder, smoked paprika, salt, and pepper to the bowl. Continue to whisk until all ingredients are fully incorporated.
  3. Taste the marinade and adjust seasoning if necessary. You can add more honey for sweetness or more mustard for tanginess, depending on your preference.
  4. Place the chicken breasts in a large resealable plastic bag or a shallow dish.
  5. Pour the honey mustard marinade over the chicken, ensuring that each piece is well coated.
  6. Seal the bag or cover the dish with plastic wrap. Refrigerate for at least 1 hour, but for best results, marinate for 4 hours or overnight.
  7. While the chicken is marinating, preheat your oven to 400°F (200°C).
  8. Take the bacon slices and lay them out on a baking sheet lined with parchment paper. Make sure the slices do not overlap.
  9. Bake the bacon in the preheated oven for about 15-20 minutes, or until crispy. Once done, remove from the oven and let it cool on a paper towel-lined plate.
  10. After marinating, remove the chicken from the refrigerator. Preheat a large skillet or grill pan over medium-high heat.
  11. Remove the chicken from the marinade, allowing any excess to drip off. Discard the remaining marinade.
  12. Add a tablespoon of olive oil to the skillet if needed. Place the chicken breasts in the skillet, making sure not to overcrowd the pan.
  13. Cook the chicken for about 6-7 minutes on one side without moving it.

  18. On a serving platter, arrange the chicken slices. Sprinkle the crumbled bacon generously over the top.
