Ingredients
Scale
- 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
- 2 tablespoons soy sauce
- 1 tablespoon rice wine or sherry
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium onion, sliced
- 4 cloves garlic, minced
- 1-inch piece of ginger, minced
- 2–3 tablespoons Hunan chili paste (adjust to taste)
- 1 tablespoon sugar
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1/4 cup chicken broth
- 2 green onions, chopped (for garnish)
- Cooked jasmine rice (for serving)
Instructions
- In a medium bowl, combine the chicken pieces with soy sauce, rice wine, and cornstarch. Mix well until the chicken is evenly coated. Cover with plastic wrap and let it marinate in the refrigerator for at least 30 minutes.
- Slice the red and green bell peppers and onion into thin strips. Mince the garlic and ginger.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken in a single layer and cook for about 5-7 minutes, stirring occasionally, until browned and cooked through. Remove the chicken and set aside.
- In the same skillet, add another tablespoon of vegetable oil if needed. Add the sliced onions, bell peppers, garlic, and ginger. Stir-fry for about 3-4 minutes until tender-crisp.
- Add the cooked chicken back into the skillet with the vegetables. Stir in the Hunan chili paste, sugar, rice vinegar, sesame oil, and chicken broth. Mix well and let it simmer for about 2-3 minutes.
- Taste and adjust seasoning if necessary. Garnish with chopped green onions and serve hot over cooked jasmine rice.
