- In a medium bowl, whisk together the flour, baking soda, and salt.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
- Beat in the eggs one at a time, then mix in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
- Gently fold in the chocolate chips (or your chosen mix-ins).
- Drop rounded balls of dough onto ungreased baking sheets, leaving about 2 inches of space between each cookie.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheets for about 5 minutes, then transfer to wire racks to cool completely.
- Scoop softened ice cream into a bowl and mix in any additional flavors or toppings if desired.
- Once cooled, pair the cookies based on size and shape.
- Take one cookie from each pair, place a generous scoop of ice cream on the flat side, and spread evenly.
- Place the second cookie on top of the ice cream, flat side down, and gently press down.
- Roll the edges of the ice cream sandwich in sprinkles, crushed cookies, or nuts if desired.
- Place the assembled sandwiches on a baking sheet lined with parchment paper and freeze for at least 1-2 hours.
- Once frozen, slice in half for presentation or serve whole.
