  • 1 tablespoon lemon zest (from about 1 lemon)
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium mixing bowl, combine 1 cup of all-purpose flour, 1/2 cup of powdered sugar, and 1/4 teaspoon of salt. Whisk until well mixed.
  3. Add 1/2 cup of softened unsalted butter to the dry mixture. Mix until it resembles coarse crumbs.
  4. Press the mixture firmly into the bottom of a greased 8×8-inch baking dish.
  5. Bake the crust for about 15-20 minutes, or until lightly golden.
  6. In a large mixing bowl, whisk together 1 cup of granulated sugar and 2 large eggs until smooth.
  7. Add 1/4 cup of freshly squeezed lemon juice and 1 tablespoon of lemon zest. Whisk until well combined.
  8. In a separate bowl, whisk together 1/4 cup of all-purpose flour and 1/2 teaspoon of baking powder. Gradually add to the lemon mixture, whisking until smooth.
  9. Once the crust has cooled for about 5 minutes, pour the lemon filling over it, spreading evenly.
  10. Return to the oven and bake for an additional 20-25 minutes, or until the filling is set and edges are lightly golden.
  11. Remove from the oven and let cool in the pan on a wire rack for 1-2 hours.
