- 1 cup of crushed digestive biscuits (or graham crackers)
- 1/2 cup of unsweetened cocoa powder
- 1/2 cup of powdered sugar
- 1/4 cup of unsalted butter, melted
- 1/4 cup of fresh lemon juice
- 1 tablespoon of lemon zest (from about 1 lemon)
- 1 teaspoon of vanilla extract
- 1/2 cup of white chocolate chips
- 1/4 cup of desiccated coconut (optional, for rolling)
- 1/4 cup of finely chopped nuts (optional, for rolling)
Instructions
- In a large mixing bowl, combine the crushed digestive biscuits and unsweetened cocoa powder. Stir well to ensure that the dry ingredients are evenly mixed.
- Add the powdered sugar to the bowl and mix until fully incorporated with the biscuit and cocoa mixture.
- In a separate bowl, combine the melted unsalted butter, fresh lemon juice, lemon zest, and vanilla extract. Whisk these ingredients together until they are well blended.
- Pour the wet mixture into the dry ingredients. Using a spatula or your hands, mix everything together until a dough-like consistency forms. The mixture should be moist but not overly sticky. If it feels too dry, add a little more lemon juice, one teaspoon at a time.
- Once the mixture is well combined, fold in the white chocolate chips. Ensure they are evenly distributed throughout the mixture.
- Cover the bowl with plastic wrap or a clean kitchen towel and place it in the refrigerator. Allow the mixture to chill for at least 30 minutes.
- After the mixture has chilled, remove it from the refrigerator. Prepare a baking sheet lined with parchment paper for placing the truffles.
- Using a small cookie scoop or your hands, take about a tablespoon of the mixture and roll it into a ball. Repeat this process until all the mixture is used up.
- If desired, roll the truffles in desiccated coconut or finely chopped nuts to coat them. Place the coated truffles back on the parchment-lined baking sheet.
- Once all the truffles are formed and coated, return them to the refrigerator for another 30 minutes.
- After the second chilling period, remove the truffles from the refrigerator. They are now ready to be served!
- Arrange the truffles on a serving platter. You can garnish them with additional lemon zest or a sprinkle of cocoa powder for an elegant touch.
- For an added flavor boost, consider drizzling some melted white chocolate over the truffles before serving.
- Serve the lemon truffles chilled or at room temperature.
