  • 1/2 cup of unsweetened cocoa powder
  • 1/2 cup of powdered sugar
  • 1/4 cup of unsalted butter, melted
  • 1/4 cup of fresh lemon juice
  • 1 tablespoon of lemon zest (from about 1 lemon)
  • 1 teaspoon of vanilla extract
  • 1/2 cup of white chocolate chips
  • 1/4 cup of desiccated coconut (optional, for rolling)
  • 1/4 cup of finely chopped nuts (optional, for rolling)

Instructions

  1. In a large mixing bowl, combine the crushed digestive biscuits and unsweetened cocoa powder. Stir well to ensure that the dry ingredients are evenly mixed.
  2. Add the powdered sugar to the bowl and mix until fully incorporated with the biscuit and cocoa mixture.
  3. In a separate bowl, combine the melted unsalted butter, fresh lemon juice, lemon zest, and vanilla extract. Whisk these ingredients together until they are well blended.
  4. Pour the wet mixture into the dry ingredients. Using a spatula or your hands, mix everything together until a dough-like consistency forms. The mixture should be moist but not overly sticky. If it feels too dry, add a little more lemon juice, one teaspoon at a time.
  5. Once the mixture is well combined, fold in the white chocolate chips. Ensure they are evenly distributed throughout the mixture.
  6. Cover the bowl with plastic wrap or a clean kitchen towel and place it in the refrigerator. Allow the mixture to chill for at least 30 minutes.
  7. After the mixture has chilled, remove it from the refrigerator. Prepare a baking sheet lined with parchment paper for placing the truffles.
  8. Using a small cookie scoop or your hands, take about a tablespoon of the mixture and roll it into a ball. Repeat this process until all the mixture is used up.
  9. If desired, roll the truffles in desiccated coconut or finely chopped nuts to coat them. Place the coated truffles back on the parchment-lined baking sheet.
  10. Once all the truffles are formed and coated, return them to the refrigerator for another 30 minutes.
  11. After the second chilling period, remove the truffles from the refrigerator. They are now ready to be served!
  12. Arrange the truffles on a serving platter. You can garnish them with additional lemon zest or a sprinkle of cocoa powder for an elegant touch.
  13. For an added flavor boost, consider drizzling some melted white chocolate over the truffles before serving.
  14. Serve the lemon truffles chilled or at room temperature.
