Instructions

- Juice the Lemon: Roll the lemon on the countertop, cut it in half, and extract the juice into a small bowl, catching any seeds.
- Mix the Dressing: In the bowl with lemon juice, add honey or agave syrup and whisk until dissolved. If desired, add water to thin and vanilla extract for extra flavor.
- Add Fresh Mint: If using, finely chop mint leaves and add to the dressing for a refreshing taste.
- Pour the Dressing Over the Fruit: Drizzle the dressing over the mixed fruits in the large bowl.
- Toss Gently: Using a spatula or large spoon, gently toss the fruits and dressing together without mashing the fruits.
- Taste and Adjust: Taste the salad and adjust sweetness with more honey or a squeeze of lemon if needed.
