  • Yield: 4-6 servings 1x

Description

This Lemonade Fruit Salad is a refreshing blend of mixed fresh fruits, enhanced with a zesty lemonade dressing. Ideal for summer events or as a light dessert, it’s both delicious and visually stunning, making it a perfect addition to any gathering.

Ingredients

Scale
  • 4 cups of mixed fresh fruits (such as strawberries, blueberries, kiwi, pineapple, and grapes)
  • 1 medium-sized lemon
  • 2 tablespoons of honey or agave syrup
  • 1 tablespoon of fresh mint leaves, finely chopped (optional)
  • 1/2 teaspoon of vanilla extract (optional)
  • 1/4 cup of water (if needed)

Instructions

  1. Wash the Fruits: Rinse all fresh fruits under cold running water using a colander to remove dirt and pesticides.
  2. Chop the Fruits: Cut the fruits into bite-sized pieces: quarter strawberries, leave blueberries whole, peel and slice kiwi, dice pineapple, and halve or leave grapes whole.
  3. Combine the Fruits: In a large mixing bowl, gently combine all chopped fruits using a wooden spoon to avoid bruising.
  4. Juice the Lemon: Roll the lemon on the countertop, cut it in half, and extract the juice into a small bowl, catching any seeds.
  5. Mix the Dressing: In the bowl with lemon juice, add honey or agave syrup and whisk until dissolved. If desired, add water to thin and vanilla extract for extra flavor.
  6. Add Fresh Mint: If using, finely chop mint leaves and add to the dressing for a refreshing taste.
  7. Pour the Dressing Over the Fruit: Drizzle the dressing over the mixed fruits in the large bowl.
  8. Toss Gently: Using a spatula or large spoon, gently toss the fruits and dressing together without mashing the fruits.
  9. Taste and Adjust: Taste the salad and adjust sweetness with more honey or a squeeze of lemon if needed.
  10. Refrigerate: Cover the bowl with plastic wrap or transfer to an airtight container and refrigerate for at least 30 minutes to meld flavors.
  11. Prepare to Serve: After chilling, gently toss the salad again to redistribute the dressing.
  12. Plate the Salad: Serve in individual bowls or on a large platter, layering fruits in a clear glass bowl for visual appeal.
  13. Garnish (Optional): Garnish with additional mint leaves or shredded coconut for added flavor and presentation.
  14. Enjoy: Serve immediately or keep chilled until ready to serve.
