  • 1 cup cooked chicken, shredded (or turkey, if preferred)
  • 1/2 cup sharp cheddar cheese, shredded
  • 1/4 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 tablespoons pure maple syrup
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 cup fresh spinach leaves
  • 1/2 cup sliced cucumbers
  • 1/4 cup sliced red onion (optional)
  • 1 tablespoon olive oil (for drizzling)

Instructions

  1. In a medium-sized mixing bowl, combine the mayonnaise, Dijon mustard, and pure maple syrup.
  2. Add the garlic powder, black pepper, and salt to the mixture.
  3. Whisk the ingredients together until smooth and well combined. Taste and adjust seasoning if necessary. Set aside.
  4. In a separate bowl, add the shredded chicken (or turkey) and pour half of the prepared sauce over it.
  5. Mix the chicken with the sauce until it is evenly coated. If you prefer a creamier filling, you can add more sauce to your liking.
  6. Fold in the shredded sharp cheddar cheese into the chicken mixture. Ensure it is evenly distributed.
  7. Preheat your oven to 350°F (175°C) if you prefer your croissants warm and slightly toasted.
  8. While the oven is preheating, take the croissants and slice them in half horizontally. Be careful not to cut all the way through; you want them to remain connected on one side.
  9. Place the sliced croissants on a baking sheet lined with parchment paper, cut side up.
  10. Spread a generous amount of the remaining sauce on the inside of each croissant half.
  11. On the bottom half of each croissant, layer a handful of fresh spinach leaves.
  12. Next, spoon the chicken and cheese mixture evenly onto the spinach layer, ensuring each sandwich has a good amount of filling.
  13. If desired, add sliced cucumbers and red onion on top of the chicken mixture for added crunch and flavor.
  14. Close the croissants gently, pressing down slightly to secure the filling inside.
  15. If you prefer warm sandwiches, place the assembled croissant sandwiches in the preheated oven.
  16. Bake for about 10-12 minutes, or until the croissants are golden brown and the cheese is melted.
