- 4 large croissants
- 1 cup cooked chicken, shredded (or turkey, if preferred)
- 1/2 cup sharp cheddar cheese, shredded
- 1/4 cup mayonnaise
- 2 tablespoons Dijon mustard
- 2 tablespoons pure maple syrup
- 1/4 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1 cup fresh spinach leaves
- 1/2 cup sliced cucumbers
- 1/4 cup sliced red onion (optional)
- 1 tablespoon olive oil (for drizzling)
Instructions
- In a medium-sized mixing bowl, combine the mayonnaise, Dijon mustard, and pure maple syrup.
- Add the garlic powder, black pepper, and salt to the mixture.
- Whisk the ingredients together until smooth and well combined. Taste and adjust seasoning if necessary. Set aside.
- In a separate bowl, add the shredded chicken (or turkey) and pour half of the prepared sauce over it.
- Mix the chicken with the sauce until it is evenly coated. If you prefer a creamier filling, you can add more sauce to your liking.
- Fold in the shredded sharp cheddar cheese into the chicken mixture. Ensure it is evenly distributed.
- Preheat your oven to 350°F (175°C) if you prefer your croissants warm and slightly toasted.
- While the oven is preheating, take the croissants and slice them in half horizontally. Be careful not to cut all the way through; you want them to remain connected on one side.
- Place the sliced croissants on a baking sheet lined with parchment paper, cut side up.
- Spread a generous amount of the remaining sauce on the inside of each croissant half.
- On the bottom half of each croissant, layer a handful of fresh spinach leaves.
- Next, spoon the chicken and cheese mixture evenly onto the spinach layer, ensuring each sandwich has a good amount of filling.
- If desired, add sliced cucumbers and red onion on top of the chicken mixture for added crunch and flavor.
- Close the croissants gently, pressing down slightly to secure the filling inside.
- If you prefer warm sandwiches, place the assembled croissant sandwiches in the preheated oven.
- Bake for about 10-12 minutes, or until the croissants are golden brown and the cheese is melted.
- Keep an eye on them to prevent over-browning. If they are browning too quickly, you can cover them loosely with aluminum foil.
- Once done, remove the sandwiches from the oven and let them cool for a minute before serving.
- Drizzle a little olive oil over the top of the sandwiches for added flavor and a glossy finish.
