- Preheat your oven to 400°F (200°C). Wash and scrub the sweet potatoes thoroughly.
- Place the sweet potatoes on a baking sheet lined with aluminum foil.
- Roast for 45-60 minutes, or until tender when pierced with a fork. Cooking time may vary.
- Let the sweet potatoes cool, then peel and mash until smooth to yield about 2 cups.
- In a large mixing bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy (3-4 minutes).
- Add the mashed sweet potatoes and mix until well combined.
- Incorporate maple syrup, eggs, and vanilla extract, mixing until fully combined.
- In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Avoid overmixing.
- If using, fold in chopped pecans.
- Grease and flour two 9-inch round cake pans, or line with parchment paper.
- Divide the batter evenly between the pans and smooth the tops.
