  • 1 pound boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 8 ounces pasta (fettuccine or penne)
  • Fresh basil leaves, for garnish
  • Red pepper flakes, optional, for heat

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
  3. Add the seasoned chicken breasts to the skillet and cook for about 5-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F/75°C).
  4. Remove the chicken from the skillet and cover with aluminum foil to keep warm.
  5. In the same skillet, reduce heat to medium and add minced garlic. Sauté for about 30 seconds until fragrant.
  6. Add Italian seasoning and cherry tomatoes, stirring well. Cook for 3-4 minutes until tomatoes soften.
  7. Pour in heavy cream and chicken broth, stirring to combine. Bring to a gentle simmer.
  8. Add grated Parmesan cheese, stirring continuously until melted and creamy. Adjust thickness with more chicken broth if needed.
  9. Season with additional salt and pepper, and add red pepper flakes if desired.
  10. In a large pot, bring salted water to a boil. Add pasta and cook according to package instructions until al dente.
  11. Reserve about 1 cup of pasta water, then drain the pasta in a colander (do not rinse).
  12. Add drained pasta directly to the skillet with the creamy sauce and toss to coat.
  13. If the sauce is too thick, gradually add reserved pasta water until desired consistency is reached.
  14. Slice cooked chicken breasts and place on top of the pasta. Gently toss to combine.
  15. Cook for an additional 2-3 minutes on low heat to warm through.
  16. Remove skillet from heat and transfer the Marry Me Chicken Pasta to a serving bowl or individual plates.
  17. Garnish with fresh basil leaves and serve immediately while hot.
