- 1 pound boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 cup cherry tomatoes, halved
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup grated Parmesan cheese
- 8 ounces pasta (fettuccine or penne)
- Fresh basil leaves, for garnish
- Red pepper flakes, optional, for heat
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
- Add the seasoned chicken breasts to the skillet and cook for about 5-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F/75°C).
- Remove the chicken from the skillet and cover with aluminum foil to keep warm.
- In the same skillet, reduce heat to medium and add minced garlic. Sauté for about 30 seconds until fragrant.
- Add Italian seasoning and cherry tomatoes, stirring well. Cook for 3-4 minutes until tomatoes soften.
- Pour in heavy cream and chicken broth, stirring to combine. Bring to a gentle simmer.
- Add grated Parmesan cheese, stirring continuously until melted and creamy. Adjust thickness with more chicken broth if needed.
- Season with additional salt and pepper, and add red pepper flakes if desired.
- In a large pot, bring salted water to a boil. Add pasta and cook according to package instructions until al dente.
- Reserve about 1 cup of pasta water, then drain the pasta in a colander (do not rinse).
- Add drained pasta directly to the skillet with the creamy sauce and toss to coat.
- If the sauce is too thick, gradually add reserved pasta water until desired consistency is reached.
- Slice cooked chicken breasts and place on top of the pasta. Gently toss to combine.
- Cook for an additional 2-3 minutes on low heat to warm through.
- Remove skillet from heat and transfer the Marry Me Chicken Pasta to a serving bowl or individual plates.
- Garnish with fresh basil leaves and serve immediately while hot.
