Ingredients

Scale
  • 1 pound ground beef
  • 1/2 pound ground pork
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 jar (24 ounces) marinara sauce
  • 4 sub rolls
  • 8 slices provolone cheese
  • Olive oil for frying

Instructions

  1. In a large mixing bowl, combine the ground beef and ground pork.
  2. Add the breadcrumbs, grated Parmesan cheese, chopped parsley, minced garlic, dried oregano, salt, and black pepper to the bowl.
  3. Crack the egg into the mixture and mix everything together until just combined, being careful not to overmix.
  4. Form the mixture into meatballs, about 1 to 1.5 inches in diameter (you should get around 16-20 meatballs).
  5. In a large skillet, heat a couple of tablespoons of olive oil over medium heat.
  6. Carefully add the meatballs to the skillet, making sure not to overcrowd the pan.
  7. Cook the meatballs for about 5-7 minutes, turning occasionally to brown all sides.
  8. Once browned, remove the meatballs from the skillet and set them aside on a plate.
  9. In the same skillet, pour in the jar of marinara sauce and bring it to a gentle simmer over medium heat.
  10. Carefully add the browned meatballs back into the skillet, ensuring they are submerged in the sauce.
  11. Cover the skillet and let the meatballs simmer in the sauce for about 20-25 minutes.
  12. Preheat your oven to 350°F (175°C).
  13. Slice the sub rolls in half lengthwise, keeping them connected on one side.
  14. Place the sub rolls on a baking sheet, cut side up.
  15. Optionally, brush a little olive oil or melted butter on the cut sides of the rolls.
  16. Toast the rolls in the oven for about 5-7 minutes, or until lightly golden and crispy.
  17. Place a few meatballs in each toasted sub roll.
  18. Top with marinara sauce and a slice of provolone cheese.
  19. Return the assembled subs to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
  20. Serve hot and enjoy!
