- 1 cup Nutella (or any hazelnut spread)
Instructions
- Cream together the softened butter, granulated sugar, and brown sugar using an electric mixer on medium speed for about 2-3 minutes until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Pour in the vanilla extract and mix until smooth and creamy.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
- Gradually add the dry mixture to the wet ingredients, mixing on low speed until just combined. Avoid overmixing.
- If desired, fold in the chocolate chips for added richness.
- Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes.
- While the dough chills, scoop about 1 tablespoon of Nutella onto a parchment-lined baking sheet, repeating until you have 12-15 dollops. Freeze for about 15 minutes.
- Preheat your oven to 350°F (175°C).
- Scoop about 2 tablespoons of dough, roll into a ball, and flatten slightly.
- Place a frozen Nutella dollop in the center of the flattened dough, fold the edges over, and pinch to seal.
- Arrange the stuffed dough balls on a parchment-lined baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes, until the edges are lightly golden and the centers remain soft.
- Let the cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
