  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips (or raisins, if you prefer)
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine the rolled oats, all-purpose flour, baking soda, salt, and ground cinnamon. Mix until well combined.
  3. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).
  4. Add the egg and vanilla extract to the butter mixture and beat until smooth and creamy.
  5. Gradually add the dry ingredients to the wet ingredients in three parts, mixing well after each addition.
  6. Fold in the chocolate chips (or raisins) and chopped nuts, ensuring they are evenly distributed.
  7. Grease a 9×13 inch baking dish with butter or cooking spray, or line it with parchment paper for easy removal.
  8. Pour the oatmeal cookie batter into the prepared baking dish and spread it out evenly.
  9. Bake in the preheated oven for 25-30 minutes, checking at the 25-minute mark. The bars are done when golden brown and a toothpick inserted in the center comes out clean or with a few crumbs.
  10. Remove from the oven and let cool in the pan for 10-15 minutes.
  11. Lift the bars out using parchment paper (if used) and cut into squares or rectangles. Serve immediately or store in an airtight container.

  • For a nut-free version, simply omit the chopped nuts.
