These oatmeal cookie bars combine chewy oats, sweet chocolate chips, and warm spices for a delightful treat. Easy to make and perfect for sharing, they are ideal for any occasion!

- 2 cups rolled oats
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar, packed
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup chocolate chips (or raisins, if you prefer)
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine the rolled oats, all-purpose flour, baking soda, salt, and ground cinnamon. Mix until well combined.
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).
- Add the egg and vanilla extract to the butter mixture and beat until smooth and creamy.
- Gradually add the dry ingredients to the wet ingredients in three parts, mixing well after each addition.
- Fold in the chocolate chips (or raisins) and chopped nuts, ensuring they are evenly distributed.
- Grease a 9×13 inch baking dish with butter or cooking spray, or line it with parchment paper for easy removal.
- Pour the oatmeal cookie batter into the prepared baking dish and spread it out evenly.
- Bake in the preheated oven for 25-30 minutes, checking at the 25-minute mark. The bars are done when golden brown and a toothpick inserted in the center comes out clean or with a few crumbs.
- Remove from the oven and let cool in the pan for 10-15 minutes.
- Lift the bars out using parchment paper (if used) and cut into squares or rectangles. Serve immediately or store in an airtight container.
Notes
- For a nut-free version, simply omit the chopped nuts.
- You can substitute chocolate chips with raisins or other dried fruits for a different flavor.
- These bars can be stored at room temperature for up to a week or in the refrigerator for longer freshness.
