Description
A deliciously cheesy and caramelized onion bake, perfect as a side dish or main course, featuring a blend of mozzarella and Parmesan cheeses, topped with a golden crust. Enjoy it warm, garnished with fresh parsley!

- 4 large onions (preferably yellow or sweet onions)
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1/2 cup breadcrumbs (preferably Italian seasoned)
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Peel the onions and slice them in half from top to bottom.
- Slice each half into thin half-moons, about 1/4 inch thick.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions.
- Stir occasionally, allowing them to cook down and caramelize for about 15-20 minutes until soft and golden brown. Add a splash of water if they start to stick.
- Add the minced garlic, oregano, basil, salt, and pepper. Stir and cook for an additional 2-3 minutes until fragrant.
- Remove from heat and set aside to cool slightly.
- In a large mixing bowl, combine the shredded mozzarella and grated Parmesan cheese.
- Add the breadcrumbs and drizzle in the remaining olive oil. Mix until well combined.
- Fold in the cooled caramelized onions until evenly distributed.
- Preheat your oven to 375°F (190°C).
- Grease a 9×13 inch baking dish with olive oil or cooking spray.
- Transfer the onion and cheese mixture into the baking dish, spreading it out evenly and pressing down gently.
- Sprinkle additional grated Parmesan cheese on top.
- Bake in the preheated oven for about 25-30 minutes until golden brown and bubbly.
- If needed, broil for an additional 2-3 minutes for extra browning, watching closely to prevent burning.
- Let cool for 5-10 minutes before serving.
- Cut into squares and serve warm, garnished with freshly chopped parsley.
Notes
- This dish can be made ahead of time and stored in the refrigerator. Reheat in the oven before serving.
- Feel free to experiment with different cheeses or add cooked bacon for an extra flavor boost!
