  • 4 large onions (preferably yellow or sweet onions)
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs (preferably Italian seasoned)
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Peel the onions and slice them in half from top to bottom.
  2. Slice each half into thin half-moons, about 1/4 inch thick.
  3. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions.
  4. Stir occasionally, allowing them to cook down and caramelize for about 15-20 minutes until soft and golden brown. Add a splash of water if they start to stick.
  5. Add the minced garlic, oregano, basil, salt, and pepper. Stir and cook for an additional 2-3 minutes until fragrant.
  6. Remove from heat and set aside to cool slightly.
  7. In a large mixing bowl, combine the shredded mozzarella and grated Parmesan cheese.
  8. Add the breadcrumbs and drizzle in the remaining olive oil. Mix until well combined.
  9. Fold in the cooled caramelized onions until evenly distributed.
  10. Preheat your oven to 375°F (190°C).
  11. Grease a 9×13 inch baking dish with olive oil or cooking spray.
  12. Transfer the onion and cheese mixture into the baking dish, spreading it out evenly and pressing down gently.
  13. Sprinkle additional grated Parmesan cheese on top.
  14. Bake in the preheated oven for about 25-30 minutes until golden brown and bubbly.
  15. If needed, broil for an additional 2-3 minutes for extra browning, watching closely to prevent burning.
  16. Let cool for 5-10 minutes before serving.
  17. Cut into squares and serve warm, garnished with freshly chopped parsley.
