- 1 teaspoon garlic powder
- 1/2 teaspoon red pepper flakes (optional, for a bit of heat)
- 1/4 cup fresh basil leaves, chopped (for garnish)
- Balsamic glaze (for drizzling, optional)
Instructions
- Peel the onions and slice them into thick rings, about 1/2 inch thick.
- In a large mixing bowl, combine the sliced onions with olive oil, salt, black pepper, oregano, garlic powder, and red pepper flakes (if using). Toss until the onions are well coated.
- Preheat your grill to medium heat.
- Place the onion rings directly on the grill grates or use a grill basket or skewers.
- Grill the onions for about 5-7 minutes on each side, until tender and marked.
- Remove from the grill and let cool slightly.
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper and spread the seasoned onion rings in a single layer.
- Roast for about 25-30 minutes, flipping halfway through, until golden brown and tender.
- Remove from the oven and let cool slightly.
- Preheat your oven to broil (or keep the grill on medium heat).
- Place the onions on a baking dish or grill-safe platter.
- Evenly distribute the mozzarella cheese over the onions.
- Broil for about 3-5 minutes, or until the cheese is bubbly and golden brown, or let it melt on the grill.
- Carefully remove the dish from the oven or grill.
- Transfer the cheesy onion rings to a serving platter.
- Sprinkle chopped fresh basil over the top.
- Drizzle with balsamic glaze if desired.
