Ingredients

Scale
  • 4 large onions (preferably yellow or sweet onions)
  • 2 cups fresh mozzarella cheese, shredded or sliced
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon red pepper flakes (optional, for a bit of heat)
  • 1/4 cup fresh basil leaves, chopped (for garnish)
  • Balsamic glaze (for drizzling, optional)

Instructions

  1. Peel the onions and slice them into thick rings, about 1/2 inch thick.
  2. In a large mixing bowl, combine the sliced onions with olive oil, salt, black pepper, oregano, garlic powder, and red pepper flakes (if using). Toss until the onions are well coated.
  3. Preheat your grill to medium heat.
  4. Place the onion rings directly on the grill grates or use a grill basket or skewers.
  5. Grill the onions for about 5-7 minutes on each side, until tender and marked.
  6. Remove from the grill and let cool slightly.
  7. Preheat your oven to 400°F (200°C).
  8. Line a baking sheet with parchment paper and spread the seasoned onion rings in a single layer.
  9. Roast for about 25-30 minutes, flipping halfway through, until golden brown and tender.
  10. Remove from the oven and let cool slightly.
  11. Preheat your oven to broil (or keep the grill on medium heat).
  12. Place the onions on a baking dish or grill-safe platter.
  13. Evenly distribute the mozzarella cheese over the onions.
  14. Broil for about 3-5 minutes, or until the cheese is bubbly and golden brown, or let it melt on the grill.
  15. Carefully remove the dish from the oven or grill.
  16. Transfer the cheesy onion rings to a serving platter.
  17. Sprinkle chopped fresh basil over the top.
  18. Drizzle with balsamic glaze if desired.
