Instructions
- Preheat your oven to 350°F (175°C). Line a cupcake tin with paper liners.
- In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
- In a large mixing bowl, cream the softened butter and granulated sugar together using an electric mixer on medium speed for about 3-4 minutes until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Add the plain yogurt and passionfruit pulp to the butter mixture and mix until well combined.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk. Start and end with the dry ingredients, mixing until just combined.
- Fill each cupcake liner about two-thirds full with the batter.
- Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let cool in the tin for about 5 minutes before transferring to a wire rack to cool completely.
- Prepare a simple glaze by mixing powdered sugar with a little passionfruit pulp and a splash of milk until desired consistency is reached, or make a frosting by whipping together 1/2 cup of softened cream cheese with 1/4 cup of butter, adding powdered sugar to taste and a splash of vanilla extract.
- Once the cupcakes are completely cool, drizzle the glaze or spread the frosting on top. Use a piping bag for decorative swirls if desired.
- Garnish with fresh passionfruit pulp or edible flowers, and dust with powdered sugar if desired.
