Instructions

  1. Preheat your oven to 350°F (175°C). Line a cupcake tin with paper liners.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  3. In a large mixing bowl, cream the softened butter and granulated sugar together using an electric mixer on medium speed for about 3-4 minutes until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Add the plain yogurt and passionfruit pulp to the butter mixture and mix until well combined.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Start and end with the dry ingredients, mixing until just combined.
  7. Fill each cupcake liner about two-thirds full with the batter.
  8. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove from the oven and let cool in the tin for about 5 minutes before transferring to a wire rack to cool completely.
  10. Prepare a simple glaze by mixing powdered sugar with a little passionfruit pulp and a splash of milk until desired consistency is reached, or make a frosting by whipping together 1/2 cup of softened cream cheese with 1/4 cup of butter, adding powdered sugar to taste and a splash of vanilla extract.
  11. Once the cupcakes are completely cool, drizzle the glaze or spread the frosting on top. Use a piping bag for decorative swirls if desired.
  12. Garnish with fresh passionfruit pulp or edible flowers, and dust with powdered sugar if desired.
