  • 1/2 cup chopped nuts (optional)

Instructions

  1. In a large mixing bowl, combine 1 cup of creamy peanut butter and 1 cup of honey (or maple syrup). Mix until smooth and creamy.
  2. Add 1 teaspoon of vanilla extract and 1/2 teaspoon of salt. Stir until well incorporated.
  3. Gradually sift in 1 cup of unsweetened cocoa powder and mix until fully blended.
  4. Pour in 2 cups of rolled oats and mix until evenly distributed.
  5. If desired, add 1/2 cup of chocolate chips and 1/2 cup of chopped nuts. Stir until well combined.
  6. Line an 8×8 inch baking dish with parchment paper, leaving some overhang for easy removal.
  7. Transfer the peanut butter mixture into the lined baking dish and spread it evenly. Press down firmly to compact it.
  8. Cover the dish with plastic wrap or aluminum foil and refrigerate for at least 2 hours, or until firm. Alternatively, freeze for 30-45 minutes.
  9. Remove the dish from the refrigerator or freezer and lift the fudge out using the parchment paper overhang.
