- 1 cup creamy peanut butter
- 1 cup unsweetened cocoa powder
- 1 cup honey or maple syrup
- 2 cups rolled oats
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 cup chocolate chips (optional)
- 1/2 cup chopped nuts (optional)
Instructions
- In a large mixing bowl, combine 1 cup of creamy peanut butter and 1 cup of honey (or maple syrup). Mix until smooth and creamy.
- Add 1 teaspoon of vanilla extract and 1/2 teaspoon of salt. Stir until well incorporated.
- Gradually sift in 1 cup of unsweetened cocoa powder and mix until fully blended.
- Pour in 2 cups of rolled oats and mix until evenly distributed.
- If desired, add 1/2 cup of chocolate chips and 1/2 cup of chopped nuts. Stir until well combined.
- Line an 8×8 inch baking dish with parchment paper, leaving some overhang for easy removal.
- Transfer the peanut butter mixture into the lined baking dish and spread it evenly. Press down firmly to compact it.
- Cover the dish with plastic wrap or aluminum foil and refrigerate for at least 2 hours, or until firm. Alternatively, freeze for 30-45 minutes.
- Remove the dish from the refrigerator or freezer and lift the fudge out using the parchment paper overhang.
- Place the fudge on a cutting board and cut into squares or rectangles as desired.
- Serve immediately or store in an airtight container. They can be kept in the refrigerator for up to a week or in the freezer for up to three months.
