This Pepper Steak is a quick and delicious dish featuring tender flank steak sautéed with vibrant bell peppers and onions in a savory sauce. Ideal for a weeknight meal, it pairs perfectly with rice or noodles for a satisfying dinner.

- 1 pound of flank steak, sliced thinly against the grain
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil, divided
- 1 medium onion, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 3 cloves garlic, minced
- 1 teaspoon fresh ginger, minced
- 1 tablespoon oyster sauce
- 1 tablespoon rice vinegar
- 1 tablespoon brown sugar
- 1/2 cup beef broth
- Salt and pepper to taste
- Cooked rice or noodles, for serving
Instructions
- In a medium bowl, combine the soy sauce and cornstarch. Add the sliced flank steak and mix well to coat. Let marinate for at least 15 minutes, or up to an hour in the refrigerator.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated steak in a single layer (cook in batches if necessary) and cook for 2-3 minutes on each side until browned and just cooked through. Remove from skillet and set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil. Add the sliced onion and bell peppers, sautéing for about 5 minutes until tender-crisp. Stir in the minced garlic and ginger, cooking for an additional 1-2 minutes until fragrant.
- In a small bowl, whisk together the oyster sauce, rice vinegar, brown sugar, and beef broth. Pour this mixture into the skillet with the sautéed vegetables, stirring well to combine and bring to a simmer.
- Return the cooked steak to the skillet, stirring to coat in the sauce and mix with the vegetables. Allow to simmer for 2-3 minutes, adding water or more beef broth if the sauce is too thick. Season with salt and pepper to taste.
- Serve hot over cooked rice or noodles. Garnish with sliced green onions or sesame seeds if desired.
