- 1 pound fresh strawberries, washed and thoroughly dried
- 12 ounces pink candy melts or pink chocolate chips
- 1 tablespoon vegetable shortening (optional, for smoother melting)
- Sprinkles, edible glitter, or other decorations (optional)
- Parchment paper or wax paper
Instructions
- Gently wash the strawberries under cool running water. Be careful not to bruise them.
- This is crucial! Any moisture on the strawberries will prevent the chocolate from adhering properly and can cause it to seize. Pat them dry with paper towels. Then, lay them out on a clean surface and let them air dry for at least 30 minutes to ensure they are completely dry. I sometimes even use a gentle fan to speed up the process.
- Line a baking sheet with parchment paper or wax paper. This will prevent the chocolate-covered strawberries from sticking.
- Place the pink candy melts or chocolate chips in a microwave-safe bowl. If you’re using vegetable shortening, add it now. The shortening helps to thin the chocolate and create a smoother, more glossy coating.
- Microwave the chocolate in 30-second intervals, stirring well after each interval. This prevents the chocolate from overheating and burning.
- Continue microwaving and stirring until the chocolate is completely melted and smooth. Be patient! It might take a few intervals. If you notice any lumps, keep stirring they should eventually melt. If the chocolate seems too thick, add a tiny bit more shortening (a teaspoon at a time) and stir until smooth.
- Fill a saucepan with about an inch or two of water. Bring the water to a simmer over medium heat.
- Place the pink candy melts or chocolate chips in a heatproof bowl that fits snugly over the saucepan without touching the water.
- As the water simmers, the steam will gently melt the chocolate. Stir the chocolate occasionally to ensure even melting.
- Once the chocolate is mostly melted, add the vegetable shortening (if using) and stir until completely smooth and glossy.
- Keep the water simmering gently to keep the chocolate melted and smooth while you’re dipping the strawberries.
- This gives you the best control and prevents you from getting chocolate all over your fingers.
- Dip the strawberry into the melted pink chocolate, swirling it gently to coat it evenly. You can dip it completely or leave a small portion of the red strawberry showing.
- Gently lift the strawberry out of the chocolate and let the excess chocolate drip back into the bowl. You can also gently tap the strawberry against the side of the bowl to remove any excess.
- Place the chocolate-covered strawberry on the prepared baking sheet lined with parchment paper or wax paper.
- If you’re using sprinkles, edible glitter, or other decorations, sprinkle them onto the chocolate-covered strawberry immediately after dipping. The chocolate will set quickly, so you need to add the decorations while it’s still wet.
- Repeat the dipping and decorating process with the remaining strawberries.
- Place the baking sheet with the chocolate-covered strawberries in the refrigerator for about 15-20 minutes, or until the chocolate is firm. This will help the chocolate set quickly and prevent it from melting.
- If you don’t want to refrigerate them, you can let the chocolate set at room temperature. This will take longer, about 30-60 minutes, depending on the temperature of your room.
