Instructions

  1. In a small saucepan, combine 1/4 cup of the finely chopped pistachios with 1 cup of whole milk.
  2. Heat the mixture over medium heat, stirring occasionally, until it’s warm but not boiling (about 5-7 minutes).
  3. Remove from heat and let it steep for about 10 minutes to infuse the flavor.
  4. Strain the mixture through a fine-mesh sieve into a bowl or another saucepan, discarding the solids.
  5. In the same saucepan, combine the strained pistachio milk with 1 cup of heavy cream.
  6. Add 1/2 cup of white chocolate chips and stir over medium heat until melted and smooth (about 5 minutes).
  7. Stir in 1 teaspoon of vanilla extract and 1/4 teaspoon of salt.
  8. If desired, add a few drops of green food coloring for a festive touch.
  9. Pour the hot chocolate into mugs, filling them about three-quarters full.
  10. Top with a generous dollop of whipped cream.
  11. Sprinkle extra chopped pistachios on top for garnish.
  12. For an indulgent touch, drizzle melted white chocolate over the whipped cream.
