Instructions
- In a small saucepan, combine 1/4 cup of the finely chopped pistachios with 1 cup of whole milk.
- Heat the mixture over medium heat, stirring occasionally, until its warm but not boiling (about 5-7 minutes).
- Remove from heat and let it steep for about 10 minutes to infuse the flavor.
- Strain the mixture through a fine-mesh sieve into a bowl or another saucepan, discarding the solids.
- In the same saucepan, combine the strained pistachio milk with 1 cup of heavy cream.
- Add 1/2 cup of white chocolate chips and stir over medium heat until melted and smooth (about 5 minutes).
- Stir in 1 teaspoon of vanilla extract and 1/4 teaspoon of salt.
- If desired, add a few drops of green food coloring for a festive touch.
- Pour the hot chocolate into mugs, filling them about three-quarters full.
- Top with a generous dollop of whipped cream.
- Sprinkle extra chopped pistachios on top for garnish.
- For an indulgent touch, drizzle melted white chocolate over the whipped cream.
