  • Yield: 1 serving 1x

Description

Creamy Raspberry Coconut Cloud Smoothie packed with flavor and nutrients. Made with frozen raspberries, banana, coconut, vanilla, and almond. A refreshing and healthy treat.

Ingredients

Scale
  • 1 cup frozen raspberries
  • 1/2 cup unsweetened shredded coconut
  • 1 frozen banana, sliced
  • 1 cup coconut milk (full-fat or light)
  • 1/2 cup plain Greek yogurt (optional)
  • 1 tablespoon chia seeds (optional)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract (optional)
  • 12 tablespoons honey or maple syrup (adjust to taste)
  • Ice cubes (if needed)
  • Toasted coconut flakes, for garnish (optional)
  • Fresh raspberries, for garnish (optional)

Instructions

  1. Combine Frozen Fruit: In a blender, add the frozen raspberries and sliced frozen banana.
  2. Add Coconut Goodness: Add the shredded coconut and coconut milk to the blender.
  3. Boost with Yogurt and Seeds (Optional): Add the Greek yogurt (if using) and chia seeds (if using).
  4. Flavor Enhancement: Add the vanilla extract and almond extract (if using).
  5. Sweeten to Taste: Add honey or maple syrup, starting with 1 tablespoon, and adjust to your desired sweetness.
  6. Start Blending: Secure the lid and blend on low speed, gradually increasing to high until smooth and creamy (30-60 seconds).
  7. Check Consistency: If too thick, add more coconut milk (1 tablespoon at a time). If too thin, add ice cubes. Blend until desired consistency is reached.
  8. Taste and Adjust: Taste and adjust sweetness or flavor as needed. Add more honey/maple syrup for sweetness, more raspberries for raspberry flavor, or more coconut for coconut flavor.
  9. Blend Again (If Needed): Blend again briefly to incorporate any adjustments.
  10. Pour into a Glass: Carefully pour the smoothie into your favorite glass.
  11. Garnish (Optional): Garnish with toasted coconut flakes and fresh raspberries.
  12. Enjoy Immediately: Serve and enjoy immediately.
