  • 1 cup cooked sausage, crumbled

  • 8 large flour tortillas (10-inch size recommended)

Instructions

  1. In a large mixing bowl, crack the 8 large eggs.
  2. Add 1/2 cup of milk to the eggs and season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
  3. Whisk the egg mixture vigorously until well combined and slightly frothy.
  4. If using raw sausage, cook it in a skillet over medium heat, crumbling as it cooks until browned and fully cooked, about 5-7 minutes.
  5. Remove the sausage from the skillet and drain any excess grease. Set aside to cool slightly.
  6. If using pre-cooked sausage, crumble it and set aside for later use.
  7. In the same skillet, add 1 tablespoon of olive oil or butter and heat over medium-low heat.
  8. Pour the egg mixture into the skillet and cook undisturbed for about 1-2 minutes until the edges start to set.
  9. Gently stir the eggs with a spatula, pushing from the edges toward the center, until fully cooked but still soft and slightly creamy, about 5-7 minutes.
  10. Remove the skillet from heat and stir in the cooked sausage and 1 cup of shredded cheddar cheese until melted and evenly distributed.
  11. Lay out the 8 large flour tortillas on a clean, flat surface.
  12. Evenly distribute the egg, sausage, and cheese mixture among the tortillas, placing about 1/4 to 1/3 cup in the center of each.
  13. Fold in the sides of the tortillas over the filling, then roll from the bottom up to create a tight roll, tucking in the sides as you roll.
  14. Repeat this process for all tortillas until all the filling is used up.
  15. Preheat your oven to 375°F (190°C).
  16. Lightly grease a baking dish with cooking spray or olive oil.
  17. Place the rolled-up tortillas seam-side down in the greased baking dish, ensuring they are snug but not overcrowded.
  18. If desired, sprinkle extra shredded cheese on top of the roll-ups.
