Instructions
- In a large mixing bowl, crack the 8 large eggs.
- Add 1/2 cup of milk to the eggs and season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
- Whisk the egg mixture vigorously until well combined and slightly frothy.
- If using raw sausage, cook it in a skillet over medium heat, crumbling as it cooks until browned and fully cooked, about 5-7 minutes.
- Remove the sausage from the skillet and drain any excess grease. Set aside to cool slightly.
- If using pre-cooked sausage, crumble it and set aside for later use.
- In the same skillet, add 1 tablespoon of olive oil or butter and heat over medium-low heat.
- Pour the egg mixture into the skillet and cook undisturbed for about 1-2 minutes until the edges start to set.
- Gently stir the eggs with a spatula, pushing from the edges toward the center, until fully cooked but still soft and slightly creamy, about 5-7 minutes.
- Remove the skillet from heat and stir in the cooked sausage and 1 cup of shredded cheddar cheese until melted and evenly distributed.
- Lay out the 8 large flour tortillas on a clean, flat surface.
- Evenly distribute the egg, sausage, and cheese mixture among the tortillas, placing about 1/4 to 1/3 cup in the center of each.
- Fold in the sides of the tortillas over the filling, then roll from the bottom up to create a tight roll, tucking in the sides as you roll.
- Repeat this process for all tortillas until all the filling is used up.
- Preheat your oven to 375°F (190°C).
- Lightly grease a baking dish with cooking spray or olive oil.
- Place the rolled-up tortillas seam-side down in the greased baking dish, ensuring they are snug but not overcrowded.
