Instructions
- In a large mixing bowl, combine the dry ingredients: 2 cups of all-purpose flour, 2 tablespoons of sugar, 1 tablespoon of baking powder, 1/2 teaspoon of baking soda, and 1/2 teaspoon of salt. Whisk them together until well blended.
- In a separate bowl, crack the 2 large eggs and whisk them lightly. Then, add in 1 3/4 cups of buttermilk, 1/2 cup of melted unsalted butter, and 1 teaspoon of vanilla extract. Mix until everything is combined.
- Pour the wet ingredients into the bowl with the dry ingredients. Gently fold the mixture together using a spatula or wooden spoon. Be careful not to overmix; its okay if there are a few lumps.
- Preheat your waffle iron according to the manufacturers instructions. If your waffle iron requires oil or cooking spray, make sure to apply it before pouring in the batter.
- Once the waffle iron is hot, pour an appropriate amount of batter onto the center of the iron. Close the lid and cook according to the manufacturers instructions, typically around 4-5 minutes, or until the waffles are golden brown and crisp.
- Carefully remove the waffle and place it on a wire rack to keep it from getting soggy. Repeat the process with the remaining batter until all waffles are cooked. You can keep the cooked waffles warm in a low oven (around 200°F) while you prepare the sausage gravy.
- In a large skillet over medium heat, add the 1 pound of breakfast sausage. Use a wooden spoon to break it up into small pieces as it cooks. Cook until the sausage is browned and cooked through, about 5-7 minutes.
- Once the sausage is cooked, sprinkle 1/4 cup of all-purpose flour over the sausage. Stir well to combine, allowing the flour to cook for about 1-2 minutes.
- Gradually pour in 2 cups of whole milk while continuously stirring to prevent lumps from forming. Keep stirring until the mixture is smooth and begins to thicken, about 5-7 minutes.
- Add in 1/2 teaspoon of black pepper, 1/4 teaspoon of salt, and if you like, 1/4 teaspoon each of garlic powder and onion powder for extra flavor. Taste the gravy and adjust the seasoning as needed.
- Let the gravy simmer on low heat for an additional 2-3 minutes, stirring occasionally, until it reaches your desired thickness. If it gets too thick, you can add a splash more milk to loosen it up.
- Serve the warm waffles topped generously with the sausage gravy. Garnish with chopped fresh parsley if desired. Enjoy your delicious breakfast!
