Description

  • 1 pound breakfast sausage, removed from casings
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 1 red bell pepper, diced
  • 8 large eggs
  • 1 cup milk
  • 1/2 cup pure maple syrup, plus more for serving
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (12.3 ounce) can refrigerated buttermilk biscuits, cut into quarters
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • Optional: Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sausage and cook, breaking it up, until browned (7-10 minutes). Remove sausage and set aside. Add diced onion and red bell pepper to the skillet and cook until softened and slightly caramelized (5-7 minutes). Remove from heat and set aside to cool slightly.
  2. In a large bowl, whisk together eggs, milk, maple syrup, cinnamon, nutmeg, salt, and pepper. Adjust seasonings to taste.
  3. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish. Layer half of the biscuit pieces, sausage, vegetables, cheddar cheese, and mozzarella cheese in the dish. Repeat layers.
  4. Pour egg mixture evenly over the layered ingredients. Cover with aluminum foil and bake for 30 minutes. Remove foil and continue baking for another 15-20 minutes, or until golden brown and set. A knife inserted into the center should come out clean.
  5. Let cool for a few minutes before serving. Cut into squares and serve warm. Drizzle with extra maple syrup and garnish with fresh parsley, if desired.
