Sweet and savory sausage maple waffle bake, perfect for breakfast or brunch! Fluffy biscuits, savory sausage, and gooey cheese are balanced by the sweetness of maple syrup.

- 1 pound breakfast sausage, removed from casings
- 1 tablespoon olive oil
- 1 medium yellow onion, diced
- 1 red bell pepper, diced
- 8 large eggs
- 1 cup milk
- 1/2 cup pure maple syrup, plus more for serving
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (12.3 ounce) can refrigerated buttermilk biscuits, cut into quarters
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- Optional: Fresh parsley, chopped, for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Add sausage and cook, breaking it up, until browned (7-10 minutes). Remove sausage and set aside. Add diced onion and red bell pepper to the skillet and cook until softened and slightly caramelized (5-7 minutes). Remove from heat and set aside to cool slightly.
- In a large bowl, whisk together eggs, milk, maple syrup, cinnamon, nutmeg, salt, and pepper. Adjust seasonings to taste.
- Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish. Layer half of the biscuit pieces, sausage, vegetables, cheddar cheese, and mozzarella cheese in the dish. Repeat layers.
- Pour egg mixture evenly over the layered ingredients. Cover with aluminum foil and bake for 30 minutes. Remove foil and continue baking for another 15-20 minutes, or until golden brown and set. A knife inserted into the center should come out clean.
- Let cool for a few minutes before serving. Cut into squares and serve warm. Drizzle with extra maple syrup and garnish with fresh parsley, if desired.
