- 1 lb ground beef
- 2 medium onions, thinly sliced
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon sesame oil
- 2 tablespoons vegetable oil
- 1 cup frozen peas and carrots mix
- 2 large eggs
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Start by preparing your ingredients. If you haven’t done so already, cook the jasmine rice according to package instructions. For best results, use rice that has been cooked and refrigerated for at least a few hours or overnight.
- Thinly slice the onions and set them aside. Mince the garlic cloves and keep them ready for use.
- Chop the green onions and set them aside for garnishing the dish later.
- In a small bowl, combine the soy sauce, oyster sauce, and sesame oil. Mix well and set aside.
- In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Once the oil is hot, add the ground beef.
- Break the beef apart with a spatula and cook until it is browned and fully cooked, about 5-7 minutes. Stir occasionally to ensure even cooking.
- Once the beef is cooked, season it with salt and pepper to taste. Remove the beef from the skillet and transfer it to a plate, leaving any rendered fat in the pan.
- In the same skillet, add the remaining tablespoon of vegetable oil. Heat it over medium heat.
- Add the sliced onions to the skillet. Sauté the onions for about 5-7 minutes, or until they become translucent and start to caramelize. Stir occasionally to prevent burning.
- Once the onions are caramelized, add the minced garlic to the skillet. Sauté for an additional 1-2 minutes until the garlic is fragrant, being careful not to let it burn.
- Return the cooked ground beef to the skillet with the onions and garlic. Stir to combine all the ingredients.
- Add the frozen peas and carrots mix to the skillet. Stir well and cook for about 3-4 minutes, or until the vegetables are heated through.
- Next, add the cooked jasmine rice to the skillet. Use a spatula to break up any clumps of rice and mix it thoroughly with the beef and vegetable mixture.
- Pour the sauce mixture (soy sauce, oyster sauce, and sesame oil) over the rice. Stir well to ensure that the rice is evenly coated with the sauce. Cook for an additional 3-5 minutes, allowing the rice to fry slightly and absorb the flavors.
- Push the rice mixture to one side of the skillet, creating a space on the other side. Crack the two eggs into the empty space in the skillet.
- Scramble the eggs gently with a spatula, cooking them until they are just set but still slightly runny, about 1-2 minutes.
- Once the eggs are cooked, mix them into the rice mixture, ensuring they are evenly distributed throughout the dish.
- Continue to stir-fry the rice for another 2-3 minutes, allowing it to get a little crispy on the bottom if desired. Taste the fried rice and adjust the seasoning with additional salt and pepper if needed.
- Once everything is well combined and heated through, remove the skillet from the heat.
- Transfer the savory onion beef fried rice to a serving dish and garnish with chopped green onions.
