These shrimp tacos feature marinated shrimp, fresh veggies, and warm tortillas, making them ideal for a quick dinner or festive occasion. Topped with creamy avocado and zesty lime, they are a crowd-pleaser!

- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- Salt and pepper, to taste
- 8 small corn or flour tortillas
- 1 cup shredded cabbage (green or purple)
- 1/2 cup diced tomatoes
- 1/4 cup chopped fresh cilantro
- 1 avocado, sliced
- 1 lime, cut into wedges
- 1/2 cup sour cream or Greek yogurt (optional)
- Hot sauce, to taste (optional)
Instructions
- Rinse the shrimp under cold water to remove any residual salt or debris. Pat them dry with paper towels.
- In a large mixing bowl, combine olive oil, chili powder, cumin, garlic powder, smoked paprika, salt, and pepper. Mix well to create a marinade.
- Add the shrimp to the bowl and toss until evenly coated. Allow to marinate for at least 15 minutes, or up to 1 hour in the refrigerator.
- Heat a large skillet over medium-high heat.
- Add the marinated shrimp in a single layer, avoiding overcrowding. Cook for 2-3 minutes on one side until pink and opaque, then flip and cook for an additional 1-2 minutes. Remove from skillet and cover with aluminum foil to keep warm.
- In the same skillet, reduce heat to medium. Add more olive oil if desired.
- Warm each tortilla for about 30 seconds on each side until pliable and slightly toasted. Stack on a plate and cover with a kitchen towel.
- Place a generous amount of shredded cabbage in the center of a warm tortilla.
- Add 3-4 shrimp on top of the cabbage.
- Top with diced tomatoes and chopped cilantro.
- Add avocado slices and drizzle with sour cream or Greek yogurt if desired. Add hot sauce for extra kick.
- Squeeze fresh lime juice over the assembled tacos.
Notes
- For a spicier kick, increase the amount of chili powder or add diced jalapeños to the tacos.
