  • 1 tablespoon olive oil
  • 1 cup chicken broth
  • 1 cup sliced onions (about 1 medium onion)
  • 2 cups sliced mushrooms (optional)
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon cornstarch (optional, for thickening sauce)
  • 2 tablespoons cold water (optional, for thickening sauce)

Instructions

  1. Pat the pork chops dry with paper towels. In a small bowl, mix salt, black pepper, garlic powder, onion powder, and paprika. Rub this mixture all over the pork chops.
  2. Heat olive oil in a large skillet over medium-high heat. Add the pork chops and sear for 3-4 minutes on each side until golden brown. Remove from skillet and set aside.
  3. In the same skillet, add sliced onions and mushrooms (if using). Sauté for about 5 minutes until softened and slightly caramelized.
  4. Pour in chicken broth, Worcestershire sauce, soy sauce, and brown sugar. Stir well, scraping up any browned bits from the skillet.
  5. Pour the mixture into the slow cooker. Place the seared pork chops on top, ensuring they are nestled in the liquid.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours. Preferably use the low setting for more tenderness.
  7. About 30 minutes before cooking time is up, check the internal temperature of the pork chops; it should reach 145°F (63°C).
  8. If desired, mix cornstarch with cold water in a small bowl until smooth.
  9. Once the pork chops are done, remove them from the slow cooker. Stir the cornstarch slurry into the sauce, turn the slow cooker to high, and cook for an additional 10-15 minutes until thickened.
  10. Return the pork chops to the slow cooker, spooning sauce over them.
  11. Serve each pork chop on a plate with the onion and mushroom sauce ladled over the top. Pairs well with mashed potatoes, rice, or steamed vegetables.
  12. Sprinkle with chopped parsley or chives before serving for added freshness.
