- 1 pound smoked sausage, sliced into 1/4-inch rounds
- 4 medium-sized potatoes, peeled and diced into 1-inch cubes
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup bell peppers, chopped (any color)
- 1 cup shredded cheddar cheese
- 1 cup heavy cream
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- Wash and peel the potatoes. Cut them into 1-inch cubes and place them in a large mixing bowl.
- Chop the onion and bell peppers into small pieces. Add them to the bowl with the potatoes.
- Peel and mince the garlic cloves, then add them to the bowl as well.
- Slice the smoked sausage into 1/4-inch rounds and set aside.
- In the bowl with the diced potatoes, onions, bell peppers, and garlic, drizzle 1 tablespoon of olive oil over the mixture.
- Sprinkle in the paprika, dried thyme, salt, and pepper. Use a spatula or your hands to mix everything together until the vegetables and potatoes are evenly coated with the oil and seasonings.
- Add the sliced smoked sausage to the bowl and mix again to combine all the ingredients thoroughly.
- In a separate bowl, pour in 1 cup of heavy cream.
- Add a pinch of salt and pepper to the cream, and whisk it gently until well combined.
- Take a large baking dish (approximately 9×13 inches) and lightly grease it with cooking spray or a little olive oil.
- Transfer the potato, sausage, and vegetable mixture into the greased baking dish, spreading it out evenly.
- Pour the heavy cream mixture over the top of the ingredients in the baking dish.
- Sprinkle 1 cup of shredded cheddar cheese over the top, distributing it evenly.
- Cover the baking dish with aluminum foil.
- Place the covered baking dish in the preheated oven and bake for 45 minutes.
- After 45 minutes, remove the foil and check the potatoes for doneness. If they are still firm, cover and bake for an additional 10-15 minutes.
- Once the potatoes are tender, return the dish to the oven uncovered and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
- Let the bake cool for about 5-10 minutes before serving.
- Scoop out portions onto plates or into bowls.
- Garnish with freshly chopped parsley and serve hot.
