  • 200g rolled oats
  • 100g unsalted butter
  • 100g brown sugar
  • 100g golden syrup (or honey)
  • 100g dark chocolate (at least 70% cocoa), chopped
  • 50g milk chocolate, chopped
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Line a square baking dish (approximately 8×8 inches) with parchment paper.
  3. In a medium saucepan over low heat, combine the unsalted butter, brown sugar, and golden syrup. Stir gently until melted and well combined, about 5 minutes.
  4. Remove the melted butter mixture from heat and stir in the vanilla extract and a pinch of salt.
  5. In a large mixing bowl, add the rolled oats and pour the melted butter mixture over them. Mix well to ensure all oats are coated evenly.
  6. Fold in the chopped dark and milk chocolate, reserving a small handful for topping. Gently mix until evenly distributed.
  7. Pour the mixture into the prepared baking dish and press down firmly with a spatula or the back of a spoon.
  8. Smooth the top with the spatula and sprinkle reserved chocolate pieces on top if desired.
  9. Place the baking dish in the preheated oven and bake for about 20-25 minutes, until the edges are golden brown and the center remains soft.
  10. Remove the dish from the oven and let it cool in the pan for about 10 minutes. Then lift the flapjacks out using the parchment paper and let them cool completely on a wire rack.
  11. Once cooled, cut the flapjacks into squares or rectangles with a sharp knife.
  12. Store the flapjacks in an airtight container at room temperature for up to a week.
