  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 ounces) tomato sauce
  • 1 can (6 ounces) tomato paste
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup sour cream
  • 1 cup cottage cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Instructions

  1. Bring a large pot of salted water to a boil over high heat.
  2. Add the egg noodles to the boiling water and cook according to package instructions until al dente, usually about 7-9 minutes.
  3. Once cooked, drain the noodles in a colander and set aside. Rinse with cold water to stop the cooking process and prevent sticking.
  4. In a large skillet or saucepan, heat a tablespoon of olive oil over medium heat.
  5. Add the chopped onion and sauté for about 3-4 minutes until it becomes translucent.
  6. Stir in the minced garlic and cook for an additional 1 minute, being careful not to burn it.
  7. Add the ground beef (or turkey) to the skillet. Cook, breaking it apart with a spatula, until browned and cooked through, about 5-7 minutes.
  8. Drain any excess fat from the skillet if necessary.
  9. Stir in the tomato sauce, tomato paste, diced tomatoes (with their juice), dried basil, dried oregano, salt, and black pepper. Mix well to combine.
  10. Bring the mixture to a simmer, then reduce the heat to low. Let it simmer for about 10-15 minutes, stirring occasionally, to allow the flavors to meld.
  11. In a medium bowl, combine the sour cream and cottage cheese. Mix until well blended.
  12. Set aside the cheese mixture for later use.
  13. Preheat your oven to 350°F (175°C).
  14. In a large mixing bowl, combine the cooked egg noodles with the meat sauce. Stir until the noodles are evenly coated with the sauce.
  15. In a greased 9×13 inch baking dish, spread half of the noodle and meat sauce mixture evenly across the bottom.
  16. Spread the sour cream and cottage cheese mixture over the first layer of noodles, ensuring it covers the noodles evenly.
  17. Sprinkle 1 cup of shredded mozzarella cheese over the cheese mixture.
  18. Layer the remaining noodle and meat sauce mixture on top of the cheese layer, spreading it evenly.
  19. Top with the remaining mozzarella cheese and sprinkle the grated Parmesan cheese over the top for added flavor.
  20. Cover the baking dish with aluminum foil to prevent the cheese from browning too quickly.
  21. Bake in the preheated oven for 25 minutes.
  22. After 25 minutes, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.
  23. Once baked, remove the dish from the oven and let it sit for about 10 minutes before serving. This will help the layers set and make it easier to cut.
