Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup corn (canned or frozen)
  • 1 cup black beans (canned, rinsed, and drained)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup sour cream
  • 1/4 cup salsa
  • 1 avocado, sliced (optional)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your grill or stovetop grill pan over medium-high heat. Ensure it’s clean and lightly oiled to prevent sticking.
  2. Pound the chicken breasts to an even thickness of about 1/2 inch on a cutting board.
  3. In a small bowl, mix chili powder, cumin, garlic powder, onion powder, salt, and pepper.
  4. Rub olive oil over both sides of the chicken breasts and coat them with the spice mixture.
  5. Grill the chicken for 6-7 minutes on each side until the internal temperature reaches 165°F (75°C).
  6. Remove the chicken from the grill and let it rest for 5 minutes.
  7. While the chicken rests, wash and chop the lettuce and tomatoes.
  8. If using canned corn and black beans, drain and rinse them. For frozen corn, microwave until heated through.
  9. Slice the avocado just before assembling the wraps.
  10. Gather all ingredients for easy assembly.
  11. Lay a flour tortilla flat on a clean surface.
  12. Add a generous amount of shredded lettuce in the center of the tortilla.
  13. Place sliced grilled chicken on top of the lettuce.
  14. Add diced tomatoes, corn, and black beans.
  15. Sprinkle shredded cheese on top.
  16. If using, add avocado slices.
  17. Drizzle sour cream and salsa over the fillings.
  18. Fold the sides of the tortilla inwards, then roll from the bottom up, tucking in the fillings as you go.
  19. (Optional) For a warm, crispy wrap, grill the assembled wraps seam-side down for 2-3 minutes on each side until golden brown.
  20. Serve immediately, garnished with fresh cilantro if desired.
