- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 4 large flour tortillas
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1 cup corn (canned or frozen)
- 1 cup black beans (canned, rinsed, and drained)
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup sour cream
- 1/4 cup salsa
- 1 avocado, sliced (optional)
- Fresh cilantro for garnish (optional)
Instructions
- Preheat your grill or stovetop grill pan over medium-high heat. Ensure its clean and lightly oiled to prevent sticking.
- Pound the chicken breasts to an even thickness of about 1/2 inch on a cutting board.
- In a small bowl, mix chili powder, cumin, garlic powder, onion powder, salt, and pepper.
- Rub olive oil over both sides of the chicken breasts and coat them with the spice mixture.
- Grill the chicken for 6-7 minutes on each side until the internal temperature reaches 165°F (75°C).
- Remove the chicken from the grill and let it rest for 5 minutes.
- While the chicken rests, wash and chop the lettuce and tomatoes.
- If using canned corn and black beans, drain and rinse them. For frozen corn, microwave until heated through.
- Slice the avocado just before assembling the wraps.
- Gather all ingredients for easy assembly.
- Lay a flour tortilla flat on a clean surface.
- Add a generous amount of shredded lettuce in the center of the tortilla.
- Place sliced grilled chicken on top of the lettuce.
- Add diced tomatoes, corn, and black beans.
- Sprinkle shredded cheese on top.
- If using, add avocado slices.
- Drizzle sour cream and salsa over the fillings.
- Fold the sides of the tortilla inwards, then roll from the bottom up, tucking in the fillings as you go.
- (Optional) For a warm, crispy wrap, grill the assembled wraps seam-side down for 2-3 minutes on each side until golden brown.
- Serve immediately, garnished with fresh cilantro if desired.
