- 2 cups cooked rice
- 1 can of Spam (12 oz), diced
- 1 cup kimchi, chopped
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 small onion, diced
- 2 green onions, chopped
- 2 large eggs
- 2 tablespoons soy sauce
- 1 tablespoon gochujang
- Salt and pepper to taste
- Sesame oil (for drizzling, optional)
Instructions
- Cook the Rice: If you dont have day-old rice, cook your rice according to package instructions. Once cooked, spread it out on a baking sheet to cool and dry out a bit.
- Prepare the Spam: Open the can of Spam and cut it into small cubes, about 1/2 inch in size.
- Chop the Kimchi: Chop the kimchi into smaller pieces if necessary.
- Mise en Place: Gather all your ingredients and have them ready to go.
- Heat the Oil: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat.
- Cook the Spam: Add the diced Spam to the hot oil and cook for about 5-7 minutes, stirring occasionally, until golden brown and crispy.
- Add Aromatics: Add the minced garlic and diced onion to the skillet. Sauté for about 2-3 minutes until the onion is translucent and the garlic is fragrant.
- Incorporate the Kimchi: Add the chopped kimchi to the skillet and cook for another 3-4 minutes.
- Add the Rice: Add the cooked rice, breaking up any clumps, and mix thoroughly.
- Season the Rice: Pour in the soy sauce and gochujang, stirring well to combine. Adjust seasoning with salt and pepper.
- Fry the Eggs: In a separate pan, heat a little oil and fry the eggs sunny-side up or to your desired doneness.
- Plate the Fried Rice: Serve the Spam kimchi fried rice in bowls.
- Top with Eggs: Place a fried egg on top of each serving.
- Garnish with Green Onions: Sprinkle chopped green onions over the top.
