  • Yield: 2-3 servings 1x

Description

This Spam Kimchi Fried Rice is a quick and flavorful dish featuring crispy Spam, tangy kimchi, and perfectly cooked rice, all topped with a fried egg. It’s an easy meal that’s great for any time of day!

Ingredients

Scale
  • 2 cups cooked rice
  • 1 can of Spam (12 oz), diced
  • 1 cup kimchi, chopped
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 2 green onions, chopped
  • 2 large eggs
  • 2 tablespoons soy sauce
  • 1 tablespoon gochujang
  • Salt and pepper to taste
  • Sesame oil (for drizzling, optional)

Instructions

  1. Cook the Rice: If you don’t have day-old rice, cook your rice according to package instructions. Once cooked, spread it out on a baking sheet to cool and dry out a bit.
  2. Prepare the Spam: Open the can of Spam and cut it into small cubes, about 1/2 inch in size.
  3. Chop the Kimchi: Chop the kimchi into smaller pieces if necessary.
  4. Mise en Place: Gather all your ingredients and have them ready to go.
  5. Heat the Oil: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat.
  6. Cook the Spam: Add the diced Spam to the hot oil and cook for about 5-7 minutes, stirring occasionally, until golden brown and crispy.
  7. Add Aromatics: Add the minced garlic and diced onion to the skillet. Sauté for about 2-3 minutes until the onion is translucent and the garlic is fragrant.
  8. Incorporate the Kimchi: Add the chopped kimchi to the skillet and cook for another 3-4 minutes.
  9. Add the Rice: Add the cooked rice, breaking up any clumps, and mix thoroughly.
  10. Season the Rice: Pour in the soy sauce and gochujang, stirring well to combine. Adjust seasoning with salt and pepper.
  11. Fry the Eggs: In a separate pan, heat a little oil and fry the eggs sunny-side up or to your desired doneness.
  12. Plate the Fried Rice: Serve the Spam kimchi fried rice in bowls.
  13. Top with Eggs: Place a fried egg on top of each serving.
  14. Garnish with Green Onions: Sprinkle chopped green onions over the top.
  15. Drizzle with Sesame Oil: Finish with a light drizzle of sesame oil if desired.
  16. Serve and Enjoy: Enjoy your delicious Spam kimchi fried rice!
