- 1 tablespoon sesame oil
- 6 cloves garlic, minced
- 1 tablespoon fresh ginger, grated

- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1 tablespoon sriracha sauce (adjust to taste)
- 1 teaspoon red pepper flakes (optional, for extra heat)
- 1 teaspoon black pepper
- 1 teaspoon salt
- 2 green onions, chopped (for garnish)
- Sesame seeds (for garnish)
Instructions
- Rinse the chicken thighs under cold water and pat them dry with paper towels.
- Cut the chicken into bite-sized pieces.
- In a large bowl, combine the chicken pieces with salt and black pepper, tossing to ensure even seasoning.
- In a separate bowl, mix together minced garlic, grated ginger, soy sauce, rice vinegar, honey, sriracha sauce, and red pepper flakes (if using).
- Pour the marinade over the seasoned chicken pieces, ensuring they are well coated.
- Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes (or up to 4 hours or overnight for enhanced flavor).
- Heat a large skillet or wok over medium-high heat and add olive oil and sesame oil.
- Once hot, add the marinated chicken pieces in a single layer, cooking undisturbed for 5-7 minutes until golden brown.
- Stir the chicken and continue cooking for another 5-7 minutes, or until cooked through (internal temperature of 165°F/75°C) and the marinade thickens into a glaze.
- Adjust spiciness with additional sriracha or red pepper flakes if desired.
- Remove the skillet from heat and let the chicken rest for a couple of minutes.
- Transfer the cooked chicken to a serving dish, drizzling any remaining sauce over the top.
- Garnish with chopped green onions and sesame seeds.

- For a milder version, reduce the amount of sriracha and red pepper flakes.
