Description

Enjoy a creamy Spinach Dip served on crispy crostini, perfect for gatherings. This delightful appetizer features fresh spinach, rich cheeses, and a hint of garlic, making it a crowd-pleaser when paired with toasted baguette slices.

Ingredients

Scale
  • 1 large baguette, sliced into 1/2-inch thick pieces
  • 2 tablespoons olive oil
  • 1 cup fresh spinach, chopped
  • 1 cup cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Arrange the sliced baguette on a baking sheet, leaving space between each slice.
  3. Drizzle olive oil over the baguette slices, using a brush or your hands to spread it evenly.
  4. Sprinkle a pinch of salt and pepper over the slices.
  5. Bake in the preheated oven for 8-10 minutes, or until golden brown and crispy. Keep an eye on them to prevent burning.
  6. Remove from the oven and let cool slightly.
  7. In a large mixing bowl, combine softened cream cheese, sour cream, and mayonnaise. Blend until smooth and creamy.
  8. Add the chopped spinach to the mixture, ensuring it’s well washed and chopped.
  9. Stir in shredded mozzarella and grated Parmesan cheese.
  10. Add minced garlic and, if desired, red pepper flakes for a kick.
  11. Season with salt and pepper to taste, adjusting as needed.
  12. Mix everything together until well combined.
  13. Preheat your oven to 350°F (175°C).
  14. Transfer the spinach dip mixture into a baking dish (a 9-inch pie dish or small casserole dish works well).
  15. Spread the dip evenly in the dish, smoothing the top with a spatula.
  16. For an extra cheesy topping, sprinkle more mozzarella and Parmesan cheese on top.
  17. Bake in the preheated oven for about 25-30 minutes, or until the dip is bubbly and golden on top.

Notes

  • For a healthier option, you can use Greek yogurt instead of sour cream and mayonnaise.
  • Feel free to customize the dip by adding other ingredients like artichokes or sun-dried tomatoes for extra flavor.
