- 1 pound of steak (sirloin or ribeye)
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 8 ounces fettuccine pasta
- 1 cup heavy cream
- 1 cup Gorgonzola cheese, crumbled
- 1/2 cup grated Parmesan cheese
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1/4 teaspoon crushed red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Choose your steak: Sirloin or ribeye is recommended for flavor and tenderness.
- Generously season both sides of the steak with salt and pepper.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
- Place the steak in the skillet and cook for 4-5 minutes on one side. Flip and cook for another 3-4 minutes for medium-rare.
- Remove the steak from the skillet and let it rest for at least 5 minutes.
- Bring a large pot of salted water to a boil.
- Add pasta and cook according to package instructions (8-10 minutes).
- Reserve 1 cup of pasta water, then drain the fettuccine.
- In the same skillet, melt 2 tablespoons of butter over medium heat. Add minced garlic and sauté for 1 minute.
- Pour in heavy cream and bring to a gentle simmer.
- Reduce heat to low, add Gorgonzola and Parmesan cheese, stirring until melted and smooth. Adjust thickness with reserved pasta water if needed.
- Taste and season the sauce with salt, pepper, and crushed red pepper flakes if desired.
- Add drained fettuccine to the skillet and toss to coat.
- Cut the rested steak against the grain into thin strips.
- Serve fettuccine Alfredo topped with sliced steak.
- Sprinkle with chopped parsley and extra Gorgonzola if desired.
