  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 package (8 oz) crescent roll dough
  • 1 tablespoon unsalted butter, melted
  • 1/4 cup graham cracker crumbs
  • Whipped cream, for serving (optional)

Instructions

  1. Wash the strawberries thoroughly under cold water and pat them dry with a paper towel.
  2. Hull the strawberries by removing the green tops and slice them into thin pieces (about 1/4 inch thick).
  3. In a medium bowl, combine the sliced strawberries, granulated sugar, and lemon juice. Toss gently until well coated.
  4. Let the mixture sit for 10-15 minutes to allow the strawberries to release their juices.
  5. In a large mixing bowl, add the softened cream cheese.
  6. Beat the cream cheese with a hand mixer or whisk until smooth and creamy (about 2-3 minutes).
  7. Gradually add the powdered sugar, mixing well after each addition to avoid lumps.
  8. Add the vanilla extract and mix until well combined. The filling should be thick and creamy.
  9. Preheat your oven to 375°F (190°C).
  10. Open the crescent roll dough package and unroll it on a clean surface.
  11. Use a rolling pin to gently roll out the dough to smooth out the seams.
  12. Cut the dough into triangles along the perforated lines (about 8 triangles).
  13. Spread a spoonful of cheesecake filling over the wide end of each triangle, leaving space at the edges.
  14. Place a spoonful of macerated strawberries on top of the cheesecake filling.
  15. Starting from the wide end, roll up each triangle towards the pointed end, rolling tightly but gently.
  16. Place the rolls on a baking sheet lined with parchment paper, spaced apart.
  17. Brush the tops of the rolls with melted butter.
  18. Sprinkle graham cracker crumbs over the top of each roll.
