- 1 cup fresh strawberries, hulled and sliced
- 2 tablespoons granulated sugar
- 1 teaspoon lemon juice
- 1 package (8 oz) cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 package (8 oz) crescent roll dough
- 1 tablespoon unsalted butter, melted
- 1/4 cup graham cracker crumbs
- Whipped cream, for serving (optional)
Instructions
- Wash the strawberries thoroughly under cold water and pat them dry with a paper towel.
- Hull the strawberries by removing the green tops and slice them into thin pieces (about 1/4 inch thick).
- In a medium bowl, combine the sliced strawberries, granulated sugar, and lemon juice. Toss gently until well coated.
- Let the mixture sit for 10-15 minutes to allow the strawberries to release their juices.
- In a large mixing bowl, add the softened cream cheese.
- Beat the cream cheese with a hand mixer or whisk until smooth and creamy (about 2-3 minutes).
- Gradually add the powdered sugar, mixing well after each addition to avoid lumps.
- Add the vanilla extract and mix until well combined. The filling should be thick and creamy.
- Preheat your oven to 375°F (190°C).
- Open the crescent roll dough package and unroll it on a clean surface.
- Use a rolling pin to gently roll out the dough to smooth out the seams.
- Cut the dough into triangles along the perforated lines (about 8 triangles).
- Spread a spoonful of cheesecake filling over the wide end of each triangle, leaving space at the edges.
- Place a spoonful of macerated strawberries on top of the cheesecake filling.
- Starting from the wide end, roll up each triangle towards the pointed end, rolling tightly but gently.
- Place the rolls on a baking sheet lined with parchment paper, spaced apart.
- Brush the tops of the rolls with melted butter.
- Sprinkle graham cracker crumbs over the top of each roll.
- Bake in the preheated oven for 12-15 minutes, or until golden brown and puffed up.
- Remove from the oven and let cool for a few minutes.
- Serve warm or at room temperature.
- Optionally, add a dollop of whipped cream on top.
