Light, fluffy Strawberry Fluff is a classic, fruity dessert perfect for potlucks. This easy recipe combines strawberry gelatin, pineapple, strawberries, marshmallows, and whipped topping for a delightful treat.

- 1 (3 ounce) package strawberry flavored gelatin
- 1 cup boiling water
- 1 (20 ounce) can crushed pineapple, undrained
- 1 (10 ounce) package frozen strawberries, partially thawed
- 1 cup miniature marshmallows
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- Optional: Additional fresh strawberries, sliced, for garnish
- Optional: Chopped pecans or walnuts for garnish
Instructions
- Dissolve the Gelatin: In a large bowl, pour in the strawberry flavored gelatin. Add 1 cup of boiling water and stir continuously until the gelatin is completely dissolved (about 2-3 minutes).
- Add the Pineapple: Pour the entire can of crushed pineapple (juice and all) into the bowl with the dissolved gelatin. Stir gently to combine.
- Incorporate the Strawberries: Add the partially thawed frozen strawberries to the gelatin and pineapple mixture. Stir to combine.
- Add the Marshmallows: Add the miniature marshmallows to the bowl and stir them in gently.
- Chill Time: Cover the bowl with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, until the gelatin is set.
- Chill Your Equipment: Place your mixing bowl and whisk attachment (or beaters if you’re using a hand mixer) in the freezer for about 15-20 minutes.
- Pour in the Cream: Pour the heavy whipping cream into the chilled mixing bowl.
- Whip the Cream: Using your stand mixer or hand mixer, start whipping the cream on medium speed. As the cream starts to thicken, gradually increase the speed to high. Keep whipping until stiff peaks form.
- Add Sweetness and Flavor: Once stiff peaks have formed, stop the mixer and add the powdered sugar and vanilla extract. Gently fold these ingredients into the whipped cream until they are just combined.
- Check the Gelatin: Remove the chilled gelatin mixture from the refrigerator. It should be firm and set.
- Fold in the Whipped Cream: Gently fold the whipped cream into the chilled gelatin mixture. Be careful not to overmix.
- Garnish (Optional): If you’re using fresh strawberries, slice them and arrange them on top of the fluff. You can also sprinkle chopped pecans or walnuts over the top for added texture and flavor.
- Chill Again (Optional): While you can serve the Strawberry Fluff immediately after assembling, I find that it tastes even better if you chill it for another 30 minutes to an hour.
- Serve and Enjoy! Scoop the Strawberry Fluff into individual serving dishes or bowls. Serve chilled and enjoy!

- Experiment with other gelatin flavors like raspberry, cherry, or lime.
