  • 1 cup fresh strawberries, hulled and sliced
  • 1 tablespoon lemon juice
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract (for whipped cream)

Instructions

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, mix the buttermilk, egg, melted butter, and vanilla extract until well combined.
  3. Gently fold the wet ingredients into the dry ingredients, being careful not to overmix. A few lumps are fine.
  4. Let the batter rest for 5-10 minutes.
  5. Hull and slice the strawberries, then sprinkle with lemon juice. Let them sit for a few minutes to macerate.
  6. In a medium bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract.
  7. Whip on medium-high speed until soft peaks form, about 3-5 minutes.
  8. Heat a non-stick skillet or griddle over medium heat and lightly grease it.
  9. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes until bubbles form and edges look set.
  10. Flip and cook for another 1-2 minutes until golden brown. Repeat with remaining batter.
  11. Stack pancakes on a plate, layering with macerated strawberries and whipped cream.
  12. Continue layering until all pancakes are stacked. Top with extra strawberry slices and optional maple syrup or powdered sugar.
