  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 can (15 oz) tomato sauce
  • 1 packet taco seasoning (or homemade)
  • 2 cups beef broth (or vegetable broth)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped green onions, avocado, tortilla chips

Instructions

  1. Gather all your ingredients and lay them out on the counter for easy access.
  2. Dice the onion and mince the garlic. Use a sharp knife or a food processor for efficiency.
  3. Rinse and drain the black beans and kidney beans to remove excess sodium.
  4. Measure out the corn, diced tomatoes, tomato sauce, and beef broth.
  5. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
  6. Add the minced garlic and cook for an additional minute until fragrant.
  7. Add the ground beef (or turkey) to the pot, breaking it up with a wooden spoon. Cook until browned and no longer pink, about 5-7 minutes. Drain excess fat if using beef.
  8. Stir in the black beans, kidney beans, corn, diced tomatoes, and tomato sauce until well combined.
  9. Sprinkle the taco seasoning over the mixture. For homemade seasoning, mix 1 tablespoon chili powder, 1 teaspoon cumin, 1 teaspoon paprika, 1 teaspoon onion powder, 1 teaspoon garlic powder, and a pinch of salt and pepper.
  10. Pour in the beef broth and stir to combine. Bring to a gentle boil, then reduce heat to low and let simmer for 20-30 minutes.
  11. Taste the soup and adjust seasoning as needed. Add hot sauce or chopped jalapeños for extra heat if desired.
  12. Serve the soup in bowls and top with shredded cheese, sour cream, chopped green onions, crushed tortilla chips, and sliced avocado if available.

Notes

  • Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days.
