- 1 pound ground beef (or turkey)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (14.5 oz) diced tomatoes with green chilies
- 1 can (15 oz) tomato sauce
- 1 packet taco seasoning (or homemade)
- 2 cups beef broth (or vegetable broth)
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, chopped green onions, avocado, tortilla chips
Instructions
- Gather all your ingredients and lay them out on the counter for easy access.
- Dice the onion and mince the garlic. Use a sharp knife or a food processor for efficiency.
- Rinse and drain the black beans and kidney beans to remove excess sodium.
- Measure out the corn, diced tomatoes, tomato sauce, and beef broth.
- In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic and cook for an additional minute until fragrant.
- Add the ground beef (or turkey) to the pot, breaking it up with a wooden spoon. Cook until browned and no longer pink, about 5-7 minutes. Drain excess fat if using beef.
- Stir in the black beans, kidney beans, corn, diced tomatoes, and tomato sauce until well combined.
- Sprinkle the taco seasoning over the mixture. For homemade seasoning, mix 1 tablespoon chili powder, 1 teaspoon cumin, 1 teaspoon paprika, 1 teaspoon onion powder, 1 teaspoon garlic powder, and a pinch of salt and pepper.
- Pour in the beef broth and stir to combine. Bring to a gentle boil, then reduce heat to low and let simmer for 20-30 minutes.
- Taste the soup and adjust seasoning as needed. Add hot sauce or chopped jalapeños for extra heat if desired.
- Serve the soup in bowls and top with shredded cheese, sour cream, chopped green onions, crushed tortilla chips, and sliced avocado if available.
Notes
- Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days.
- To reheat, warm the soup in a pot over medium heat or microwave in a safe bowl, stirring occasionally.
- If the soup thickens too much in the fridge, add a little broth or water when reheating to reach desired consistency.
