  • 1 tablespoon dried rosemary
  • 1 tablespoon dried thyme
  • 1 tablespoon smoked paprika
  • 1 teaspoon cayenne pepper (optional, for heat)
  • 1 cup beef broth (for au jus)

Instructions

  1. Let the prime rib sit at room temperature for about an hour before cooking.
  2. Preheat your oven to 450°F (232°C).
  3. Pat the prime rib dry with paper towels.
  4. In a small bowl, mix kosher salt, black pepper, garlic powder, onion powder, dried rosemary, dried thyme, smoked paprika, and cayenne pepper.
  5. Rub olive oil all over the prime rib.
  6. Generously apply the seasoning blend all over the roast.
  7. Place the seasoned prime rib on a roasting rack in a roasting pan, bone side down.
  8. Roast at 450°F for 20 minutes.
