- 2 tablespoons olive oil
- 2 tablespoons kosher salt
- 1 tablespoon black pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon dried rosemary
- 1 tablespoon dried thyme
- 1 tablespoon smoked paprika
- 1 teaspoon cayenne pepper (optional, for heat)
- 1 cup beef broth (for au jus)
- Fresh herbs for garnish (optional)
Instructions
- Let the prime rib sit at room temperature for about an hour before cooking.
- Preheat your oven to 450°F (232°C).
- Pat the prime rib dry with paper towels.
- In a small bowl, mix kosher salt, black pepper, garlic powder, onion powder, dried rosemary, dried thyme, smoked paprika, and cayenne pepper.
- Rub olive oil all over the prime rib.
- Generously apply the seasoning blend all over the roast.
- Place the seasoned prime rib on a roasting rack in a roasting pan, bone side down.
- Roast at 450°F for 20 minutes.
- Reduce the oven temperature to 325°F (163°C) and continue roasting until the internal temperature reaches your desired doneness.
- Plan for about 15-20 minutes of cooking time per pound of meat.
- Once done, remove from the oven and tent with aluminum foil. Let it rest for 20-30 minutes.
- For the au jus, add beef broth to a saucepan and bring to a simmer.
- Scrape the bottom of the roasting pan to release browned bits and pour drippings into the saucepan.
- Simmer the au jus for 5-10 minutes, seasoning to taste.
- Slice the prime rib against the grain and serve with au jus and fresh herbs if desired.
