  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 medium carrot, finely diced
  • 1 medium zucchini, finely diced
  • 1 red bell pepper, finely diced
  • 1 cup mushrooms, finely chopped
  • 1 can (15 oz) lentils, drained and rinsed (or 1.5 cups cooked lentils)
  • 1 can (28 oz) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)
  • Vegan parmesan cheese for serving (optional)

Instructions

  1. If using store-bought gnocchi, bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions (about 2-3 minutes or until they float). Drain and set aside, drizzling with olive oil to prevent sticking. For homemade gnocchi, mix 2 cups of mashed potatoes, 1 cup of all-purpose flour, and a pinch of salt until a dough forms. Roll out, cut into pieces, and shape into dumplings.
  2. In a large skillet, heat olive oil over medium heat. Sauté the chopped onion for about 5 minutes until translucent.
  3. Add minced garlic and cook for an additional minute.
  4. Stir in diced carrot, zucchini, and red bell pepper. Sauté for 5-7 minutes until tender.
  5. Add chopped mushrooms and cook for another 3-4 minutes until soft.
  6. Mix in drained lentils, then pour in crushed tomatoes and add tomato paste. Stir to combine.
  7. Season with oregano, basil, smoked paprika, salt, and pepper. Simmer on low for 15-20 minutes, stirring occasionally.
  8. Gently fold the cooked gnocchi into the sauce, ensuring they are well coated. If the sauce is too thick, add a splash of vegetable broth or water.
  9. Let the combined dish cook on low for an additional 2-3 minutes to warm through. Serve hot, garnished with fresh basil and vegan parmesan if desired.

Notes

  • This dish can be stored in an airtight container in the refrigerator for up to 3 days.
  • To reheat, warm in a skillet over medium heat, adding a splash of water or vegetable broth if necessary. It can also be reheated in the microwave, covered to prevent drying out.
