Description

A refreshing summer cocktail made with blended frozen watermelon, rosé wine, lime, lemon, and mint. The perfect way to cool down!


Ingredients

  • 6 cups cubed seedless watermelon, frozen
  • 1 bottle (750ml) rosé wine, chilled (I prefer a dry rosé for this recipe)
  • 1/4 cup fresh lime juice (about 23 limes)
  • 1/4 cup fresh lemon juice (about 23 lemons)
  • 1/4 cup fresh mint leaves, packed
  • Optional: Watermelon wedges and mint sprigs, for garnish
  • Optional: 2 tablespoons erythritol or stevia (or to taste), if you prefer a sweeter frosé

Instructions

  1. Cube the Watermelon: Cut seedless watermelon into roughly 1-inch cubes. Remove any remaining seeds.
  2. Arrange on a Baking Sheet: Spread the watermelon cubes in a single layer on a baking sheet lined with parchment paper.
  3. Freeze Solid: Place the baking sheet in the freezer for at least 4 hours, or preferably overnight, until completely frozen solid.
  4. Combine Ingredients in the Blender: Add the frozen watermelon cubes, chilled rosé wine, lime juice, lemon juice, and mint leaves to your blender. If using, add sweetener.
  5. Blend Until Smooth: Start blending on low speed, gradually increasing to high speed. Blend until the mixture is smooth and slushy. If the mixture is too thick, add a splash of rosé wine or water to help it blend.
  6. Check the Consistency: Stop the blender and check the consistency. You want it to be thick and slushy. If it’s too thick, add a little more rosé wine. If it’s too thin, add a few more frozen watermelon cubes.
  7. Taste and Adjust: Give the frosé a taste and adjust the sweetness or tartness to your liking. If it’s not sweet enough, add a little more erythritol or stevia. If it’s too sweet, add a squeeze of lime or lemon juice.
  8. Chill Your Glasses: Place your serving glasses in the freezer for about 15-20 minutes before serving.
  9. Pour and Garnish: Pour the Watermelon Frosé into the chilled glasses. Garnish with watermelon wedges and fresh mint sprigs.
  10. Serve Immediately: Watermelon Frosé is best served immediately.

  • For best results, use a high-powered blender. If you don’t have one, blend in batches.
  • The key to a perfectly textured Frosé is properly frozen watermelon.
  • Adjust sweetness to your preference.

  • To make ahead, blend and freeze. Thaw slightly and re-blend before serving.
