Instructions

  1. Cut the watermelon into quarters and remove the seeds if necessary.
  2. Cut each quarter into smaller chunks for easier blending.
  3. Place the watermelon chunks into a blender, filling it halfway.
  4. Blend on high speed until smooth, about 30 seconds to 1 minute.
  5. Strain the juice through a fine mesh sieve or cheesecloth into a bowl or pitcher to remove pulp (optional).
  6. Set aside the watermelon juice, yielding about 3 cups.
  7. In a large pitcher, combine the watermelon juice, vodka, lime juice, and simple syrup.
  8. Stir gently until well combined, tasting to adjust sweetness or acidity as needed.

  10. Cover the pitcher and refrigerate for at least 30 minutes to chill and meld flavors.
  11. For immediate serving, pour the mixture over ice in individual glasses.
