  • Total Time: 160 minutes
  • Yield: 24 truffles 1x

Description

These White Chocolate Raspberry Truffles are a luscious treat made with creamy white chocolate ganache and fresh raspberries, rolled into bite-sized balls and coated in graham cracker crumbs, cocoa powder, or nuts. Perfect for any occasion, they offer a delightful combination of flavors and textures that will satisfy your sweet tooth!

Ingredients

Scale
  • 8 ounces white chocolate, chopped
  • 1/2 cup heavy cream
  • 1/2 cup fresh raspberries, plus extra for garnish
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup graham cracker crumbs
  • 1 cup powdered sugar
  • 1/2 cup cocoa powder (for dusting)
  • 1/2 cup finely chopped nuts (optional, for coating)

Instructions

  1. Place the chopped white chocolate in a medium-sized heatproof bowl.
  2. In a small saucepan, heat the heavy cream over medium heat, stirring occasionally until it simmers (do not boil).
  3. Remove the cream from heat and pour it over the chopped white chocolate. Let it sit for 2-3 minutes.
  4. Add the vanilla extract and salt to the mixture, then gently stir until smooth and glossy.
  5. Fold in the fresh raspberries, breaking them up slightly to release their juices.
  6. Cover the bowl with plastic wrap and refrigerate for about 2 hours, or until firm enough to scoop.
  7. Line a baking sheet with parchment paper.
  8. Using a small cookie scoop or tablespoon, scoop out portions of the ganache (about 1 inch in diameter).
  9. Roll the scooped ganache between your palms to form smooth balls, dusting your hands with powdered sugar if needed.
  10. Place the rolled truffles on the prepared baking sheet and refrigerate for another 30 minutes.
  11. Prepare your coating station with separate shallow bowls of graham cracker crumbs, powdered sugar, cocoa powder, and chopped nuts (if using).
  12. Roll each chilled truffle in your desired coating, ensuring they are fully covered.
  13. Place the coated truffles back on the parchment-lined baking sheet and refrigerate for another 30 minutes to set.
  14. Garnish the truffles with additional fresh raspberries for color and flavor.
  15. Optionally, drizzle melted white chocolate over the truffles for an elegant finish.
  16. Transfer the truffles to a decorative box or plate for serving. Enjoy immediately or store in an airtight container in the refrigerator for up to one week.
