- Slice the potatoes into thin, even rounds (about 1/8 inch thick) using a sharp knife or mandoline slicer.
- Place the potato slices in a large bowl of cold water and soak for at least 30 minutes (or up to overnight) to remove excess starch.
- Drain the potato slices and pat them dry thoroughly with a clean kitchen towel or paper towels.
- In a large, heavy-bottomed pot or deep fryer, pour in enough vegetable oil to submerge the potato slices (about 2-3 inches deep). Heat the oil over medium-high heat until it reaches 350°F (175°C).
- Set up a cooling rack over a baking sheet to drain excess oil from the fried chips.
